Barley with Russian Walnut Sauce and Colored Peppers's picture
For walnut sauce
  Walnuts 2 1⁄4 Cup (36 tbs) (heaping)
  Salt 1 Teaspoon
  Garlic 2 Clove (10 gm)
  Coriander 1 Teaspoon
  Fenugreek seeds 1⁄2 Teaspoon
  Turmeric 1⁄4 Teaspoon
  Paprika 1⁄2 Teaspoon
  Cider vinegar 6 Teaspoon
  Water 1 1⁄2 Cup (24 tbs)
  Water 9 Cup (144 tbs)
  Barley 3 Cup (48 tbs)
  Olive oil 2 Tablespoon
  Red bell peppers 2 , sliced
  Green bell peppers 2 , sliced
  Yellow bell peppers 2 , sliced
  Parsley 1 Tablespoon (for garnish)
  Walnut halves 1 Tablespoon (for garnish)

1. Blend coriander, turmeric, paprika, garlic, salt, fenugreek and walnuts till a smooth consistency.
2. Drizzle with vinegar. Add enough water to make a sauce and get a light cream consistency.
3. Transfer the ingredients in a bowl. Cover and let it refrigerate for 1 hour so that the flavors can blend well.
4. In a cooking bowl boil water. Add barley to the water.
5. Lower the heat. Cover and simmer for 50 minutes till the barley gets tender.
6. In a skillet add warm olive oil.
7. Saute peppers till they start to wilt and get a brilliant color.

8. Serve Barley With Russian Walnut Sauce And Colored Peppers in individual plates. Top with walnut sauce and garnish with walnut pieces.
