Swedish Pea Soup

Ingredients
  Dried yellow peas 2 Cup (32 tbs)
  Salt pork 1 Pound
  Onion 1 , chopped
  Salt To Taste
  Ground ginger 1⁄2 Teaspoon
Directions

Soak peas overnight in 2 quarts water.
Bring to a boil; reduce heat.
Skim.
Add sliced salt pork and onion; simmer, covered, for 2 hours or until peas and salt pork are tender.
Add salt, if needed.
Stir in ginger and additional water, if necessary.
