Portuguese Beans

Ingredients
  Pink beans 1 Pound
  Water 5 Cup (80 tbs)
  Bacon strips 5 , chopped
  Onion 1 Large, chopped
  Garlic 1 Clove (5 gm), minced
  Cinnamon 1⁄2 Teaspoon
  Ground cloves 1⁄4 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Crushed cumin seeds 1 Teaspoon
  Molasses 2 Tablespoon
  Salt 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Canned italian tomatoes 28 Ounce
Directions

GETTING READY
1. In a 5-quart kettle, cover beans with water.
2. Soak overnight or quick-soak.
3. Do not drain.

MAKING
4. In a skillet or wok, fry bacon until brown.
5. Add onion and garlic.
6. Cook over low heat until onion is limp and golden.
7. Stir bacon mixture and remaining ingredients into beans, breaking the tomatoes into small pieces.
8. Bring to a boil.
9. Simmer for 90 minutes.
10. Uncover and simmer about 45 minutes more until beans are tender and sauce is thick.

SERVING
11. Serve Portuguese beans immediately with lemon wedge garnish, if desired.
