Healthy Lemon Meringue Pie

Ingredients
  Pie crust dough 1
For lemon filling
  Sugar 1 Cup (16 tbs)
  Cornstarch 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Water 1 1⁄4 Cup (20 tbs)
  Egg yolks 4
  Butter 2 Tablespoon
  Finely grated lemon peel 2 Teaspoon
  Lemon juice 1⁄2 Cup (8 tbs)
For meringue
  Egg whites 4
  Vanilla 1⁄2 Teaspoon
  Cream of tartar 1⁄4 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1) Preheat the oven to 350 F

MAKING
2) Roll out the dough on to the bottom a 9 inch pie dish
3) Trim off the excess and place in the refrigerator to chill for 15 minutes
4) Bake in the oven for 10 minutes
5) Place on a wire rack to cool
6) In a saucepan, mix together the sugar, cornstarch and salt
7) Mix in the water and blend well
8) Cook over a medium flame till thick
9) Lower the flame and cook for 2 minutes
10) In a bowl, beat the egg yolkks using an electic mixer
11) Pour 1 cup of the hot mixture to the yolks and mix briskly
12) Return the egg yolk mixture to the heat
13) Add in the butter, lemon peel, lemon juice to the hot mixture
14) Pour the filling into the pastry shell
15) Beat the egg whites using an electric beater adding with the vanilla and cream of tartar till soft peaks are formed
16) Add in the sugar tablespoon by tablespoon
17) Spread the meringue onto the filling
18) Bake for 15 minutes in the hot oven till the meringue is golden brown

SERVING
19) Serve the pie warm
