Northwoods Mushroom Swiss Melts
|Boneless skinless chicken breasts||1 Pound (4 pieces)|
|Water||3 3⁄4 Cup (60 tbs)|
|Long grain and wild rice||12 Ounce (2 boxes, UNCLE BEN'S Brand Original)|
|Chopped green bell pepper||1⁄2 Cup (8 tbs)|
|Chopped red bell pepper||1⁄2 Cup (8 tbs)|
|Sliced mushrooms||1 Cup (16 tbs)|
|Swiss cheese slices||4 Ounce (4 slices, 1 ounce each)|
1 Spray a large skillet with nonstick cooking spray.
2 Add in the chicken.
3 Cook over the medium-high heat for 5 to 7 minutes or until lightly browned on both the sides.
4 Add in water, rice and contents of seasoning packets.
5 Bring to a boil.
6 Cover and lower the heat; simmer for 20 minutes.
7 Stir in the bell peppers.
8 Sprinkle mushrooms over the chicken.
9 Cook, covered for 5 to 8 minutes or until the chicken is no longer pink in center.
10 Place the cheese over chicken.
11 Remove from the heat.
12 Allow to stand, covered, for 5 minutes or until the cheese is melted.
13 Serve a once.
