Coffee Meringue Pie
|Sugar||2⁄3 Cup (10.67 tbs)|
|Milk||1 Cup (16 tbs)|
|Strong coffee||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , separated|
|Baked pie shell||9 Inch|
Mix sugar, cornstarch and salt in top part of double boiler.
Add combined milk and coffee.
Cook over direct heat, stirring constantly, until smooth and thick.
Beat egg yolks slightly.
Pour hot mixture slowly over egg yolks and mix well.
Return to double boiler and cook over .hot water about 5 minutes, stir- ring occasionally.
Pour into baked pie shell.
Beat egg whites with salt until stiff.
Gradually beat in sugar and continue beating until mixture stands in peaks.
Arrange on top of filling.
Bake in a hot oven (425° F) 5 to 10 minutes or until lightly browned.
Makes one 9-inch pie.
