Hungarian Apple Soup
|Tart apples||4 Medium, cored, peeled, and diced|
|Onions||2 Small, chopped|
|Garlic||1 Clove (5 gm), minced|
|Green peppers||2 , diced|
|Red pepper||1 , diced|
|Cucumber||1 , peeled and diced|
|Beef stock||2 Cup (32 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Chopped fresh chives/Scallions, thinly sliced||2 Tablespoon|
1) In a slow cooker, place together apples, onions, garlic, peppers, cucumber, salt, and beef stock.
2) Put the lid on and simmer for 4 to 5 hours until apples are tender.
3) Stir in paprika and sour cream.
4) Serve hot, sprinkled with chives or scallions.
