Spanish Style Marinated Roasted Peppers

Ingredients
  Green bell peppers 2 Medium
  Red chili flakes 1⁄4 Teaspoon, crushed
  Sea salt 1 Teaspoon
  Apple cider vinegar 1 Teaspoon
  Garlic clove 1 Large, minced
  Cilantro/Parsley 2 Tablespoon, fresh chopped
  Honey 2 Tablespoon
  Extra virgin olive oil 2 Tablespoon
  Pine nuts 1⁄4 Cup (4 tbs), toasted
  Golden raisins 1⁄4 Cup (4 tbs)
  Yellow bell peppers 2 Medium
  Red bell peppers 2 Medium
  Black pepper 1 Teaspoon, freshly ground (use as per taste)
Directions

MAKING
1. Roast and peel peppers and then slice, reserving the juices.
2. In a medium mixing bowl stir together sliced roast peppers and their juices, raisins, toasted pine nuts, olive oil, honey, cilantro or parsley, garlic, apple cider vinegar, salt and crushed red chili flakes.
3. Season to taste with black pepper,
4. Marinate in refrigerator at least an hour or two – overnight is even better.

SERVING
5. Serve at room temperature.
