Bubble And Squeak

Chef Barry Lewis from My Virgin Kitchen is back with another episode of Good Food Good Times and this week he is showing you how to make bubble and squeak, perfect for leftovers this time of year.
Ingredients
  Butter 25 Gram
  Onion 1 , chopped
  Bacon rashers 2 , chopped
  Cooked mashed potatoes 450 Gram (cold)
  Cooked cabbage 220 Gram
  Cooked carrot 100 Gram
  Plain flour 1 Tablespoon
  Eggs 2 (for poaching)
  Chopped parsley 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING:

  1. Heat a frying pan and melt butter in it. Saute onions and bacon until soft.
  2. In a large bowl, combine onion-bacon mixture, potatoes, carrots, cabbage, salt, pepper and mix together. Shape into rough cakes using flour as shown in the video.
  3. Heat oil in pan and fry for 15 minutes until golden brown and crispy.
  4. Poach eggs and top on prepared squeak cake.
  5. Garnish with parsley.

SERVING:

  1. Serve and enjoy!
