Dutch Omelette

Ingredients
Eggs - 2
Gouda Cheese - 2 ounces (50 gram)
Snipped Chives - 1 tablespoon
Butter - 1 ounce
Salt to taste
Pepper freshly ground
Directions

MAKING
1) Into a large bowl break the eggs an using a fork beat them
2) Add salt and pepper to taste
3) With a sharp knife, cut the cheese into thin slices
4) Into a frying pan, melt some butter and swirl around in the pan so that the base and sides of pan are coated
5) Pour in the eggs
6) Lay the slices of cheese into the egg as soon as the egg starts to set
7) Wait till the cheese has melted
8) Fold the omelet into three, tilting the pan, slip the egg onto a plate

SERVING
9) Serve hot with come crusty bread
