Danish Blue Cheese Straws
|Flour||4 Ounce (100g)|
|Paprika pepper||1⁄4 Teaspoon (2.5 ml)|
|Butter||1 Ounce (25g)|
|Lard||1 Ounce (25g)|
|Water||30 Milliliter (2 tablespoons)|
|Danish blue cheese||2 Ounce, grated (50g)|
1. Preheat the oven to 200°C/ 400°F or Gas Mark 6
2. Sift the flour, salt and paprika together in a large bowl
3. Add the butter and the lard to the flour and rub the flour into the flour so that it resembles breadcrumbs. Add water to the flour to make stiff dough and knead well
4. Roll out the dough on a floured surface to make a thin rectangle.
5. Sprinkle the cheese on half of the dough and then fold over to enclose the cheese inside the dough.
6. Roll this out again till the dough is thin enough to show the cheese on the inside.
7. Cut into 5 mm/1/4 inch wide and 6 cm/2 1/2 inch long straws and place on a baking sheet in a preheated oven for 10 minutes
8. Cool quickly on a wire rack to room temperature.
9. These can be refrigerated at this stage by flash freezing till firm. Pack the straws in a rigid container using foil as a separator.
10. Serve the cooled cheese straws as soon as they reach room temperature
11. If you are serving the frozen straws, remove the container and thaw to room temperature for 1-2 hours and serve as soon as they reach room temperature.
