Cottage Cheese Strudel
|Strudel dough||2 Cup (32 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Cottage cheese||1 Pound|
|Grated lemon rind||1 Teaspoon|
|White raisins||1⁄4 Cup (4 tbs)|
Make and stretch strudel dough according to directions.
Cream 1/4 cup of the butter with the sugar.
Beat in egg yolks and sour cream.
Press the cottage cheese through a fine strainer and add to butter mixture.
Add lemon rind.
Beat egg whites until stiff and fold into cheese mixture.
Sprinkle surface of strudel dough with some of the remaining butter which has been melted.
Spread cheese 'mixture over 1/2 of the dough.
Sprinkle raisins over cheese mixture.
Roll and place on a buttered baking sheet.
Brush with remaining melted butter.
Bake in a moderate oven (350°F.) about 45 minutes or until golden brown Serve warm.
