|Cream of tartar||1⁄2 Teaspoon|
|Superfine sugar||2 Cup (32 tbs)|
|Pure vanilla extract||1 Teaspoon|
1 Preheat the oven to 450°Fahrenheit.
2 Allow the egg whites to reach the room temperature.
3 In a bowl, mix cream of tartar and salt with egg whites and beat until soft peaks form.
4 Continue beating, adding sugar one tablespoon at a time.
5 Stir in vanilla and cardamom.
6 Beat for another 5 minutes.
7 On brown paper or a piece of lightly greased aluminum foil placed on baking sheet, drop the mixture by spoonfuls.
8 Shape into circles and form a well in center of each, using the back of a spoon
9 Put in oven and immediately turn off the heat.
10 Allow to stand for several hours or until the oven is cold preferably overnight.
11 Do not open oven door.
12 Transfer to serving plate, carefully removing from the paper.
13 Fill with ice cream or whipped cream and top with fruit or a tasty sauce, just before serving.
You may substitute Mace or Allspice for cardamom, for interesting variations in flavor
Meringues can be made in any desired shapes, such as: puffs, mushrooms, ribbon strips, swans or hollow shells.
