Scotch Oatmeal Shortbread
|Quick cooking oats||3 Cup (48 tbs)|
|Sugar||2⁄3 Cup (10.67 tbs)|
|All-purpose flour||1⁄2 Cup (8 tbs), sifted|
|Butter/Margarine||3⁄4 Cup (12 tbs) (1 1/2 Sticks)|
|Vanilla extract||1 Teaspoon|
1 Preheat the oven to 350 degrees Fahrenheit.
2 Lightly grease a 13-by-9-by-2-inch pan.
3 In a large bowl, mix oats, sugar, flour and salt.
4 With a pastry blender or 2 knives, cut in butter until texture of coarse corn-meal.
5 Blend in vanilla extract and mix well.
6 Evenly pres the mixture with hands into prepared pan.
7 Bake for 20 to 25 minutes, or until golden. Cool slightly.
8 Cut into bars 2" x 1 1/2 while still warm.
9 Allow to cool completely in pan.
10 Serve as desired.
