Romanian Sauerkraut Soup

Ingredients
  Carrot 1⁄2 Cup (8 tbs), diced
  Fresh parsley 1⁄2 Cup (8 tbs), snipped
  Onion 1⁄2 Cup (8 tbs), chopped
  Green pepper 1⁄2 Cup (8 tbs), chopped
  Sauerkraut 27 Ounce, drained (1 can, 3 1/2 cups)
  Canned condensed beef consomme 21 Ounce (2 cans, 10 1/2 ounces each)
  Water 2 1⁄2 Cup (40 tbs)
  Tomato juice 4 Cup (64 tbs)
  Pepper 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Uncooked rice 3 Tablespoon
Directions

MAKING
1) In a large bowl, combine together all the ingredients.
2) Mix all the ingredient well.
3) In a large saucepan, pour the mixture.
4) Cover and simmer, for 1 hour, stirring occasionally.

SERVING
5) Serve with sour cream, if desired.
