Haricots Verts Aux Amandes
|Tender string beans||1 1⁄2 Pound, snap off ends (Young Variety)|
|Onion||1 Small, chopped fine|
|Slivered almonds||3 Tablespoon, toasted|
Cook beans in boiling salted water until al dente (cooked but still crisp).
Dry on a cloth or absorbent paper.
Saute onion in 2 tablespoons butter until soft and slightly yellow.
Season with salt and pepper.
Add beans plus remaining butter.
Saute until butter begins to brown.
Add almonds and toss lightly.
