|Onion||1 Small, finely chopped|
|Potato||1 , cooked, cut into dice|
|Tomatoes||2 , peeled and sliced|
|Green peas||2 Tablespoon, cooked|
|Mushrooms||2 Ounce, sliced|
1. In a good sized frying pan or saute pan melt the butter and cook onion until soft, then add potato, tomatoes, peas and mushrooms and saute all well together.
2. In a bowl beat the eggs, add a little seasoning and pour over the contents of the pan.
3. Cook until the egg is just set, then turn upside down on to a hot dish.
4. To serve sprinkle with paprika and garnish as liked.
