Pasteis Da Sta Clara
|Refined flour||250 Gram|
|Salt||1 1⁄4 Pinch (1 big pinch)|
|Icing sugar||2 Tablespoon|
For the filling 125 grams sugar.
6 egg yolks.
125 grams chopped cashewnuts.
125 grams potatoes, boiled, peeled and mashed.
1/2 tsp almond essence.
Mix together flour, salt, butter.
Add enough water to form a stiff dough.
Add 1 cup water to sugar and prepare a thick syrup.
Put in nuts and egg yolks stirring all the time till the mixture turns thick.
Add mashed potatoes.
Mix well and add the essence.
Divide the dough into small balls.
Roll out each ball into a thin round.
Place a portion of the filling on one-half of the round and fold over to form halfmoon shapes.
Seal and crimp the edges togetherâ€”Deep fry to a golden colour and roll nicely in icing sugar.
