Wilted Dandelion Greens
|Bacon slices||6 , cut into strips|
|Dandelion greens||1 1⁄2 Pound, prepared for cooking|
|Vinegar||1⁄3 Cup (5.33 tbs)|
Cook the bacon in a deep frying pan until crisp.
Drain off all but 3 tablespoons of the fat.
Add the dandelion greens, vinegar, sugar and a little salt.
Cover and simmer until the greens are wilted.
Stir frequently and taste; if necessary, add a little more vinegar to flavor the greens.
