Iced Russian Tea

Ingredients
  Hot water 1 Cup (16 tbs) (adjust quantity as needed)
  Tea 3 Tablespoon (Earl Grey's)
  Mint leaves 3
  Boiling water 6 Cup (96 tbs)
  Simple syrup 6 Tablespoon
  Lemon 1 , sliced
  Ice cubes 4
For simple syrup
  White sugar 1 Cup (16 tbs)
  Water 1 Cup (16 tbs)
Directions

Heat a jug or large teapot with the hot water.
Pour out water and add the tea and mint leaves to the jug.
Pour in the boiling water.
Steep 6 minutes.
Strain into a large pitcher.
Cool and chill.
To serve, place 1 tbsp simple syrup into each glass, add a slice of lemon and 3 ice cubes, fill the glass with tea, and stir.
This tea will be clear and fragrant.
More simple syrup and lemon may be added if desired.
Bring the sugar and water to the boil, stirring to dissolve the sugar.
Boil 1 minute.
Cool.
