Arugula And Watercress Salad With Swiss Cheese Beignets

Ingredients
  Arugula 2 Bunch (200 gm), tough stems removed
  Watercress 1 Bunch (100 gm), tough stems removed
  Vinaigrette dressing 1⁄2 Cup (8 tbs)
  Swiss cheese beignets 6 (adjust quantity as needed)
Directions

1. Wash the salad greens. Dry in a salad spinner and then pat dry in a towel. Refrigerate until ready to toss the salad.
2. In a large bowl, toss the arugula and watercress with the Vinaigrette Dressing with Garlic and Fresh Herbs. Divide among 6 or 8 plates and top with the hot Swiss Cheese Beignets.
