Marinated Mozzarella Cubes
|Mozzarella cheese||1 Pound, cut into cubes|
|Roasted red peppers||To Taste, cut into pieces|
|Garlic||2 Clove (10 gm), minced|
|Olive oil/Vegetable oil||1⁄4 Cup (4 tbs)|
|Rosemary||2 Tablespoon, minced|
|Italian seasoning||2 Teaspoon|
|Red pepper flakes||1⁄4 Teaspoon, crushed|
In a quart jar with a tight-fitting lid, layer a third of the cheese, peppers, thyme and garlic.
Repeat layers twice.
In a small bowl, combine the oil, rosemary, Italian seasoning and pepper flakes; mix well.
Pour into jar; seal and turn upside down.
Refrigerate overnight, turning several times.
Serve with bread or crackers.
