|Potato||5 Cup (80 tbs), thinly sliced|
|Onion||1 Medium, finely chopped|
|Celery||1⁄4 Cup (4 tbs), finely chopped|
|Cold water||1 Cup (16 tbs)|
|2% low fat milk||2 1⁄2 Cup (40 tbs)|
|Parsley/Parsley flakes||1 Tablespoon, chopped|
1. In bottom of heavy pot add thinly sliced potatoes, chopped onion, celery, salt and cold water and cook until onions are almost transparent and vegetables are tender.
2. Mash thoroughly in liquid or put in blender, add butter, milk and parsley and heat almost to boiling point.
3. Serve at once.
