Sugar Free Beet Borscht

Ingredients
  Canned diced beets 2 Pound, drained, reserve liquid (2 Cans, 1-Pound Each)
  Water 2 Can (20 oz)
  Artificial sweetener To Taste (To Equal 6 Teaspoons Sugar)
  Lemon juice 3 Tablespoon
  Vinegar 1 Tablespoon
  Salt 1 Teaspoon
  Lemon slice 1
  Sour cream 1 Cup (16 tbs)
Directions

In a large pan, combine beet liquid, water, sweetener, lemon juice, vinegar, saltand lemon.
Bring to a boil; reduce heat and simmer for 10 minutes.
Add beets and simmer an additional 2 or 3 minutes.
Refrigerate until cold.
Pour off beet liquid.
In blender, combine beet liquid and sour cream; blend thoroughly.
Pour liquid back into beets; stir.
Serve in glass bowls.
Makes 8 servings.
