Cottage Cheese Filling For Strudel
|Creamed cottage cheese||1 Pound, sieved|
|Egg yolks||5 , lightly beaten|
|Grated lemon peel||1|
|Cream of wheat||1⁄4 Cup (4 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
1) Take a mixing bowl and mix together cottage cheese, egg yolks, salt, lemon peel, Cream-of-Wheat, raisins and sugar in it.
2) Take another bowl and whisk egg whites in it using a wire whisk or a rotary or electric beater until they reach a soft peak stage.
3) Mix about 1/4 of the whites with the cheese mixture and then mix in the rest using a rubber spatula.
4) Use as a filling for Strudel.
