Quick Borscht Cold

Ingredients
  Canned beets with liquid 2 Cup (32 tbs)
  Sugar 4 Tablespoon
  Water 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Grated onion/1/2 teaspoon dried onion flakes 1 Teaspoon
  Lemon juice 2 Tablespoon
  Mock sour cream/Plain low-fat yogurt 6 Tablespoon (Plus Extra For Garnish)
Directions

MAKING
1) Blend all the ingredients till the mixture is smooth and creamy.
2) If the capacity of the blender is not enough to hold entire amount at one time, add all ingredients except 1 cup of water then pour off some of the pureed mixture, now add the water and blend.

SERVING
3) Into a large pitcher, pour the mixture and chill thoroughly before serving.
