Beef Tenderloin Hungarian Style

Ingredients
  Pork fat 3 Tablespoon, diced
  Beef tenderloin 3 Pound, cut into 1/2 inch x 1/4 inch x 3 inch strips
  Onion 1 Cup (16 tbs), thinly sliced
  Garlic 1⁄4 Teaspoon, finely chopped
  Sweet hungarian paprika 1 Teaspoon
  Mushrooms 1⁄2 Cup (8 tbs), sliced
  Green peppers 2 Large, cut into 2 1/2 inch x 1/8 inch strips
Directions

GETTING READY
1. In a 10”skillet, heat two tablespoons of fat over a high heat until a light haze forms over the fat
2. Add meat and toss it in the fat
3. Cook for 3-5 minutes until it’s browned all over
4. Remove from heat and set aside

MAKING
5. Add the remaining fat to the skillet and reduce heat
6. Add onions and garlic to the pan
7. Cook for 8-10 minutes until lightly colored
8. Remove the skillet from the heat
9. Add the paprika to the pan and then tip in the onions
10. Mix well till the onions are coated with the paprika
11. Add the reserved meat to the pan
12. Add in the mushrooms and peppers to the pan
13. Place the skillet on the high heat and cook the contents till they start to sizzle
14. Reduce the heat to low and cover pan
15. Simmer for 25-30 minutes until the meat is tender
16. Correct the seasonings
17. Tip the skillet and skim off the fat on the pan

FINALIZING
18. Arrange the meat and the vegetables on the platter and tip the pan juices on to of the platter

SERVING
19. Serve hot
