|Baking soda||1⁄2 Teaspoon|
|Shortening||1⁄2 Cup (8 tbs)|
|Light brown sugar||1 Cup (16 tbs)|
|Grated orange peel||1 Tablespoon|
|Orange juice||2 Tablespoon|
|Quick cooking oats||1 Cup (16 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Coarsely chopped walnuts||1⁄2 Cup (8 tbs)|
Preheat oven to 350F.
Lightly grease cookie sheets.
Sift flour with baking soda and salt; set aside.
In large bowl, with electric mixer at medium speed, beat shortening, brown sugar, and egg until fluffy.
At low speed, beat in orange peel and orange juice.
Then beat in flour mixture just until com- bined.
Stir in oats, raisins, and nuts.
Drop by tablespoon, 2 inches apart, onto pre- pared cookie sheets.
Bake 15 to 18 minutes, or until golden.
Remove to wire rack; cool.
Makes about 2-1/2 dozen
