Swedish Fattig Man
|Confectioner’s sugar||1⁄4 Cup (4 tbs)|
|Butter||2 Teaspoon, melted|
|Brandy flavoring||1 Tablespoon|
|Lemon rind||1 Tablespoon, grated|
|All purpose flour||1 3⁄4 Cup (28 tbs), sifted|
|Fat||2 Tablespoon (For Frying)|
1)In a bowl, beat eggs and yolks until light and fluffy.
2)Add sugar, butter, brandy flavoring and lemon rind and continue beating.
3)Slowly add flour and mix well.
4)On a lightly floured broad place the dough and knead lightly. Chill.
5)Roll dough out on a lightly floured board as thin as possible.
6)Cut into strips 2 inches long by 1 inch wide.
7)Cut a gash in the center of each strip and pull one corner of the dough through the gash.
8)In a pan, heat fat and fry strips until light brown. Drain.
9)Serve the Swedish Fattig Man cookies when desired.
