Apple Meringue

Ingredients
  Jam swiss rolls 6 Ounce
  Orange or lemon 1 , rind grated or juice extracted
  Unsweetened apple puree 3⁄4 Pint, frozen and thawed (Use Thick)
  Egg whites 2
  Caster sugar 4 Ounce
Directions

MAKING
1. Slice the Swiss roll and arrange its slices at the base of a 2-pt souffle dish
2. With a spoon sprinkle the grated rind and juice
3. Spread the apple over this sponge
4. In a bowl, add egg whites and whisk untill stiff
5. Add in the sugar and whisk till stiff again
6. Reserve one level tablespoon of sugar and add the rest of it into the meringue just prepared
7. Pile the meringue evenly over the apple, pull up the peaks of it.
8. Cook in the oven at 300°F for half an hour

SERVING
9. Serve Apple Meringue warm
