|Chopped onion||1⁄2 Cup (8 tbs)|
|Young immature pumpkin||3 Cup (48 tbs), peeled and cut in small cubes (Still Green)|
|Chopped parsley||1 Tablespoon|
|Sour cream/Yogurt||1 Cup (16 tbs)|
1) In a pan, saute the onion in the butter, add the pumpkin, water and salt, mix well.
2) Simmer covered for about 20 min, or until the pumpkin is just tender; remove from heat and gently stir in the remaining ingredients.
3) Serve immediately on a nice dish.
