DANISH EGG SALAD SANDWICHES WITH SMOKED SALMON
|Celery stalks||2 , finely chopped to make 1/2 cup|
|Red onion||1⁄2 Small, finely chopped to make 1/2 cup (If You Don'T Like Raw Onion Use Extra Celery Instead)|
|Smoked salmon||4 Ounce, finely chopped to make 1 cup|
|Capers||1 Tablespoon, drained|
|Fresh dill/1 teaspoon dried dill||1 Tablespoon, chopped|
|Non fat plain yogurt/Sour cream||1⁄4 Cup (4 tbs) (Or Low Fat)|
|Rolls/Rye bread/chopped lettuce||6 (French Or Ciabatta)|
Put the eggs in a small saucepan and cover them with cold water. Bring the water to a boil, cover the pot, turn off the heat, and let the eggs stand in the hot water for 12 – 14 minutes. Drain them and rinse them in cold water until they are cool. Peel and chop the eggs.
In a medium bowl, combine the eggs, celery, onions, smoked salmon, capers (optional) and dill. Combine the mayonnaise and yogurt or sour cream and stir it in to the egg mixture. Refrigerate it for up to 2 days or serve it immediately on lightly toasted bread or over lettuce.
SERVE WITH CANTALOUPE & CELERY STICKS WITH BOURSIN CHEESE
Peel, remove seeds, and cut 1 cantaloupe into bite-sized pieces. If it needs more flavor, toss it with 1 tsp. superfine sugar and a little fresh lemon or lime juice.
Trim and cut 6 - 8 celery stalks into thirds and dip in Boursin light herbed cheese. Or, fill the celery with the cheese before serving it.
