Oeufs A La Russe Eggs Russian Style

Ingredients
  Caviar 4 Teaspoon
  Artichoke hearts 4 , cooked
  Eggs 4 Small, poached
  Hollandaise sauce 1 Cup (16 tbs)
  Truffles 4
Directions

MAKING
1. In 4 separate ramekins, place an artichoke heart each.
2. Top with 1 teaspoon caviar each.
3. Place the ramekins in the oven to heat the artichokes.
4. Remove from the oven carefully place a poached egg on the artichoke heart.
5. Spoon hollandaise sauce over the poached egg.

SERVING
6. Garnish with slice of truffle and serve immediately
