Austrian Almond Slices

These Australian almond slices are highly nutritious bite and is quite filling for a hungry stomach. Good to go for a mid-day snack!
Ingredients
  Shortcrust pastry 8 Ounce
  Butter 4 Ounce
  Ground almonds 3 Ounce
  Sugar 4 Ounce
  Almond essence 2 Drop
  Apricot jam 1 Tablespoon
Directions

Roll out pastry and use it to line a shallow greased 11" x 7" tin.
Prick bottom with fork and spread thinly with apricot jam.
Melt the butter over a gentle heat.
Stir in the sugar, al- monds and essence.
Spread this filling over the jam.
Bake at 350° F for about 35 — 40 mins.
Cut into slices while still warm.
Lift out and cool on a wire tray.
