Meringue Topped Apricot Pudding
|Whole wheat bread slice||4 , cubed|
|Skim milk||2 Cup (32 tbs)|
|Egg||1 , slightly beaten|
|Raisins||1⁄4 Cup (4 tbs)|
|Sugarless apricot jam||1⁄3 Cup (5.33 tbs)|
Lightly grease an 8" x 8" baking dish.
Place bread in the dish.
Combine remaining ingredients except jam and pour over bread.
Let stand 10 minutes to absorb liquid.
Put the baking dish in a pan of hot water.
Bake at 350° for 45 minutes or until a knife inserted in the center comes out clean.
Remove the baking dish from the pan of hot water.
Over low heat,melt jam and drizzle over pudding.
Spread meringue over pudding and bake at 350° for 10 minutes or until meringue is browned.
