Mrs. Van's Dutch Apple Cake
|Sifted all purpose flour||1 1⁄4 Cup (20 tbs)|
|Baking powder||1 Teaspoon|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Dried currants||4 Tablespoon|
|Cinnamon topping||1⁄4 Cup (4 tbs)|
Sift together dry ingredients; blend in butter.
Add egg yolk and brandy.
Press dough with the fingers into a 9-inch layer-cake pan.
Cover with apples that have been peeled, cored, and cut into eighths.
Sprinkle with a few currants.
Cover with Cinnamon Topping.
Bake in preheated moderate oven (350°F.) for 45 minutes.
