Norwegian Potato Cakes
|Cold mashed potatoes||3 Cup (48 tbs)|
|Flour||1 Cup (16 tbs)|
|Butter/Margarine||3 Tablespoon, melted (Plus Extra Melted Butter For Serving)|
|Melted butter/Margarine||1 Tablespoon (For Serving)|
|Granulated sugar||1 Tablespoon (For Serving, Brown And/Or Confectioner'S Sugar)|
1. Take a deep bowl, make a mixture of flour, butter, potatoes and salt. Halve the mixture and roll out to 1/8 inch to ¼ inch thick round on a mildly floured board.
2. Cut pancake of 3 inch or 5 inch diameter, with maximum size being that of a ‘pan lid cover’. Place on ungreased hot griddle and cook for 2 minutes, turning halfway through so that both sides turn brown.
3. Spread melted butter over pancake and dust in brown sugar, confectioners' sugar [optional] and granulated sugar.
4. Serve hot or allow to cool and serve.
