|Minced yellow onion||1⁄4 Cup (4 tbs)|
|Minced sweet green pepper||1⁄4 Cup (4 tbs)|
|Eggs||2 , lightly beaten|
|Cold water||2 Tablespoon|
|Hot buttered toast slice/Buttered bread / 2 hard rolls||4 , split in half|
Stir-fry ham, onion, and green pepper in butter in a heavy 9" skillet over moderate heat 2-3 minutes until onion is limp.
Mix eggs, water, salt, and pepper, pour into skillet and fry like a pancake until firm and lightly browned underneath; turn and brown flip side.
Halve and sandwich between toast, folding as needed to fit.
