Ingredients
  Minced cooked ham 1⁄4 Cup (4 tbs)
  Minced yellow onion 1⁄4 Cup (4 tbs)
  Minced sweet green pepper 1⁄4 Cup (4 tbs)
  Butter/Margarine 1 Tablespoon
  Eggs 2 , lightly beaten
  Cold water 2 Tablespoon
  Salt 1⁄8 Teaspoon
  Pepper 1 Pinch
  Hot buttered toast slice/Buttered bread / 2 hard rolls 4 , split in half
Directions

Stir-fry ham, onion, and green pepper in butter in a heavy 9" skillet over moderate heat 2-3 minutes until onion is limp.
Mix eggs, water, salt, and pepper, pour into skillet and fry like a pancake until firm and lightly browned underneath; turn and brown flip side.
Halve and sandwich between toast, folding as needed to fit.
