Fruit Meringues

Ingredients
  Dried apricots 1⁄2 Cup (8 tbs)
  Pitted dates 1⁄2 Cup (8 tbs)
  Shredded coconut 1⁄2 Cup (8 tbs)
  Glazed cherries 1⁄4 Cup (4 tbs)
  Glazed nuts 1⁄4 Cup (4 tbs)
  Orange rind 1⁄2
  Salt 1 Pinch
  Vanilla extract 1⁄2 Teaspoon
  Egg whites 2
  Confectioners sugar 2⁄3 Cup (10.67 tbs)
Directions

Put fruits, nuts, coconut, and orange rind through food chopper, using coarse blade.
Mix well and form into 1-inch balls.
Add salt and vanilla to egg whites; beat until stiff.
Add sugar gradually, beating well after each addition.
Dip fruit balls into meringue and place on greased cookie sheets.
Bake in preheated slow oven (300° F.) for about 35 minutes.
Cool.
