IRISH POTATO CAKES
|Mashed potato||1⁄2 Pound, warm|
|Milk||1 Teaspoon (Leveled), hot|
|Self rising flour||1⁄2 Pound|
Melt butter and blend with mashed potato.
Stir in the flour a little at a time and work to a soft dough, adding a little warm milk.
Turn out on a floured board and roll out 1/4 inch thick.
Cut into rounds, dipping the cutter in flour each time it is used.
Prick cakes with fork and bake on greased gridle until browned on both sides.
Split and sandwich together with butter.
IRISH CHEESE CAKES.
While cakes are hot cover tops with grated cheese and place under grill until tops are golden.
