Swiss Sauerkraut Strata
|Rye bread slices||6 , toasted|
|Milk||2 Cup (32 tbs)|
|Caraway seed||1⁄2 Teaspoon|
|Shredded swiss cheese||2 Cup (32 tbs)|
|Chopped pimiento||2 Tablespoon|
|Canned sauerkraut||8 Ounce, drained, rinsed (1 Can)|
Cut toasted bread into 1/2-inch cubes; set aside.
In a large bowl combine beaten eggs, milk, salt, and caraway seed.
Stir in bread cubes, 1 1/2 cups of the Swiss cheese, and the chopped pimiento.
Spread sauer-kraut in an 8x8x2-inch baking dish.
Spoon egg-bread mixture over sauerkraut.
Cover and refrigerate at least 1 hour.
Bake in a 350° oven for 45 to 50 minutes.
Sprinkle with remaining Swiss cheese.
Bake 5 minutes longer or till a knife in-serted near center comes out clean.
Let stand 10 minutes before serving.
Sprinkle with parsley, if desired.
