Classic Minestra

An all-time favorite, Classic Minestra gives you the flexibility to choose whichever vegetables you want.
Ingredients
  Tomatoes 4 (peeled)
  Celery stalks/1 celeraic 3
  Onion/Mixture of onions 2 Medium
  Garlic 1 Clove (5 gm)
  Cabbage 1⁄2 Small
  Carrots 3
  Potatoes 2
  French beans 6
  Cauliflower 6
  Parsley 3 Tablespoon, chopped
  Tomato concentrate 1 Tablespoon
  Macaroni 2 Tablespoon
  Vegetable stock 2 Pint
  Bouquet garni To Taste
  Peppercorns To Taste
  Salt To Taste
  Brown sugar 1 Teaspoon
  Grated cheese 1 Tablespoon
  Oil 3 Tablespoon
Directions

MAKING
1. Wash and prepare vegetables. Cut it into small pieces.
2. In a pan, heat oil.
3. Add onions and garlic. Sauté it for a few minutes.
4. Add carrots, celery and turnip. Sauté until it turns brown.
5. Add salt, tomatoes, tomato concentrate, brown sugar, bouquet garni and stock. Simmer for 30 minutes.
6. Add cauliflower, potato, macaroni, and the green vegetables. Simmer for another 20 minutes.
7. Add more stock if needed, but the broth should be fairly thick. Simmer for a further 5 minutes

SERVING
8. To serve Classic Minestra top with parsley. Hand the cheese separately.
