Tropical Fruit Fool

Ingredients
  Ripe mango 1 Medium
  Kiwi fruit 2
  Banana 1 Medium
  Lime juice 2 Tablespoon
  Lime rind 1⁄2 Teaspoon, finely grated
  Egg whites 2 Medium
  Low fat custard 15 Ounce (425 Gram)
  Vanilla essence 1⁄2 Teaspoon
  Passion fruit 2
Directions

MAKING
1)Stone the mango and chop flesh.
2)In a food processor or blender, blend mango pieces until smooth. Alternatley, mango pieces can be mashed using a fork.
3)Peel kiwis and the banana and chop them into small pieces.
4)In a bowl, place the cut fruits and add lime juice, lime rind and mix so as to avoid decoration.
5)Take a clean bowl and whisk egg whites until peaks appear. Fold in vanilla extract and custard. Mix well.
6)Take 4 tall glasses, layer chopped fruit mixture, mango puree and custard mixture on top. Refrigerate for 20 minutes.
7)Spoon passion fruit over the custard in the glasses.

SERVING
8)Garnish each glass with lime rind and serve chilled.
