Austrian Egg Soup
|Onion||1 Small, chopped|
|Chopped celery leaves||2 Tablespoon|
|Shortening||2 Tablespoon, melted|
|Chicken||3 Pound, disjointed|
|Rice||1⁄4 Cup (4 tbs)|
1.In a suce pan, saute onion, celery and shortening until tender.
2.Put chicken in the pan and cook for 5 minutes.
3.Add a cup of water to th epan and let it boil. Repeat the process.
4.Put rice in the pan and cook until chicken is tender and rice is cooked.
5.In a bowl, beat two eggs by adding two tablespoons of broth.Add the egg content to ths pan by adding a spoon at one time.
6.Season the soup with salt and pepper and let it cook for another 5 minutes.
7.Serve warm in a bowl.
