Bridie's Irish Soda Bread

Ingredients
  All purpose flour 4 Cup (64 tbs)
  Sugar 3 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Baking soda 2 Teaspoon
  Currants 1 Cup (16 tbs), dried
  Buttermilk 1 1⁄2 Cup (24 tbs)
Directions

1. Sift flour, sugar, salt and baking soda into a large bowl; stir in currants to coat with flour.
2. Stir in buttermilk, just until flour is moistened. Knead dough in bowl with lightly floured hands 10 times.
3. Turn dough out onto lightly floured cooky sheet and shape into an 8-inch round. Cut a cross into the top with a floured knife.
4. Bake in hot oven (400°) 40 minutes, or until loaf turns golden and sounds hollow when tapped. Cool completely on a wire rack before slicing.
