Scandinavian Brown Rice Pudding
|Hot water||2 Cup (32 tbs)|
|Uncooked brown rice||2⁄3 Cup (10.67 tbs)|
|Chopped dried apricots||2 Tablespoon|
|Reduced calorie margarine||1 Tablespoon|
|Peeled gingerroot||1⁄2 Teaspoon, chopped|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Skim milk||1⁄2 Cup (8 tbs)|
In 2-quart casserole, combine all ingredients, except milk.
Microwave at High for 5 minutes.
Reduce power to 50% (Medium).
Microwave for 40 to 50 minutes longer, or until liquid is absorbed and rice is tender.
Stir in milk.
