Scandinavian Brown Rice Pudding

Ingredients
  Hot water 2 Cup (32 tbs)
  Uncooked brown rice 2⁄3 Cup (10.67 tbs)
  Currants 2 Tablespoon
  Chopped dried apricots 2 Tablespoon
  Reduced calorie margarine 1 Tablespoon
  Honey 2 Teaspoon
  Peeled gingerroot 1⁄2 Teaspoon, chopped
  Ground cinnamon 1⁄4 Teaspoon
  Ground nutmeg 1⁄8 Teaspoon
  Skim milk 1⁄2 Cup (8 tbs)
Directions

In 2-quart casserole, combine all ingredients, except milk.
Mix well.
Cover.
Microwave at High for 5 minutes.
Reduce power to 50% (Medium).
Microwave for 40 to 50 minutes longer, or until liquid is absorbed and rice is tender.
Stir in milk.
Serve warm.
