|Potatoes||1⁄2 Cup (8 tbs), mashed|
|Ground pepper||1 Dash|
|Blue cheese||2 Ounce, crumbled|
|Hamburger buns||3 , split and toasted|
|Boston lettuce leaves/Bibb lettuce||6|
Combine ground beef, mashed potatoes, salt, and pepper; mix thoroughly.
Shape into 12 thin patties, about 4 inches in diameter; place a spoonful of blue cheese on 6 patties; top with remaining patties, pinching edges together so cheese will not run out.
Brown in hot butter in heavy skillet over medium-high heat about 4 or 5 minutes per side. (Electric skillet 350°.)
Serve open-face on toasted bun halves; garnish with tomato, mushroom, and lettuce leaf on cocktail pick.
