Danish Cucumber Salad
|Red onion||1 , sliced|
|Vinegar||3⁄4 Cup (12 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Freshly ground pepper||To Taste|
|Fresh dill||1 Tablespoon, chopped|
Slice unpeeled cucumbers thinly.
In a bowl or sieve place cucumber slices.
Sprinkle with 1 tablespoon salt.
Let stand for 1 hour.
Drain and pat cucumber slices dry.
Into a bowl place cucumber and red onion slices.
In a small saucepan or microwave-safe dish combine vinegar and sugar.
Cook over low heat, stirring constantly or heat in microwave until sugar is dissolved.
Pour over cucumbers.
Let stand for 30 to 60 minutes.
Into a salad bowl place cucumber slices.
Season with salt and pepper.
Garnish with dill.
