|Lemon juice||4 Tablespoon|
|Olive oil||125 Milliliter (1/2 Cup)|
|Ground black pepper||To Taste|
1. Score the steak in a criss cross pattern on each side. Put in a flat dish and pour the lemon juice and oil over the steak. Add the pepper and allow to stand for 6 hours turning regularly. If the weather is hot place in the refrigerator.
2. Preheat the broiler and broil the steaks 10 minutes each side brushing regularly with the oil and lemon juice.
3. Lift onto a warm plate and allow to stand 5 minutes before carving. Carve downwards across the grain with a knife held at an angle of 45°. This method gives juicy slices.
