Swiss Cheese Souffle

Ingredients
  Eggs 2 , separated
  Thick cream/Evaporated milk 2⁄3 Cup (10.67 tbs)
  Swiss cheese 1⁄2 Cup (8 tbs), grated or shredded
  Cheddar cheese 1⁄2 Cup (8 tbs), grated or shredded
  Grated parmesan cheese 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  White pepper 1⁄2 Teaspoon
  Cayenne 1⁄8 Teaspoon
Directions

1. Start oven, set at Moderate, 325° F. Grease a 1-quart casserole lightly with butter or margarine.
2. Beat the yolks and cream or milk together, combine with the cheese; add seasonings. Whip egg whites stiff and mix with the cheese. Pour at once into the casserole.
3. Bake 25 to 35 minutes, or until firm on top.
